Join Lead Butcher, Callum McCarthy from Osprey’s Roost and Provisions in learning about THREE AMAZING CUTS of BEEF and learn how to prepare each of them.
From the dry rubs, marinades and preparation through to the cooking and serving, you will learn everything you know to make the most of the summer!
Featured cuts include:
· Flat Iron / Hanger steak
· Bavette
· Denver
Participants will learn about meat preparation, cooking, and serving tips.
They will sample each of the THREE prepared cuts in a recipe that showcases their unique properties and flavour.
They will leave the class with the recipes and skills they need to do it all again at home!
All necessary supplies will be provided.
Small group format – maximum 10 participants.
Suitable for beginner through intermediate cooks.

About Your Chef - Callum McCarthy
After graduating from the Culinary Institute of Canada, Callum worked for many years in kitchens throughout PEI and Nova-Scotia.
He then continued his culinary journey by completing his apprenticeship in butchery. Since then, he has become the Lead Butcher at Osprey’s Roost and Provisions through his vast base of knowledge and his passion for sustainable and ethical butchery.
When Callum is not working at Osprey, you can find him out in nature hiking, & foraging, enjoying all that our great province has to offer.
If you spot him in the city, he's most likely training for his next running race, or cooking and baking for friends and loved ones.
We are thrilled to have Callum share his knowledge, wit, and incredible skills with us!
