"Chitarra" means "guitar" in Italian and also refers to a type of square-cut spaghetti named after the tool used to make it.
The Chitarra Pasta Cutter is a wooden frame with parallel metal strings. It cuts multiple strands of pasta dough at a time. Spaghetti Alla chitarra, or guitar spaghetti, is flat on the top and bottom creating a square profile rather than round strands.
The chitarra pasta cutter double-sided design offers 2 strand widths to customize pasta: Use the narrow-set strings to slice traditional chitarra square spaghetti, 62 noodles measuring 2-millimeters wide; or flip the board over to slice 32 noodles measuring 5-millimeters wide.
Simply roll out pasta dough to desired thickness and cut a sheet to fit the chitarra’s length and width. Sprinkle flour generously on both sides of the sheet of dough, drape it over the chitarra strings, and allow a few minutes for the dough to dry.
Using a rolling pin with a light to moderate pressure, roll the pin over the dough in the same direction as the strings to slice the pasta strands. Collect the pasta strands and cook the noodles according to recipe, or hang them to dry for use on a different day. Made in Italy from all-natural Beechwood and 18/8 stainless steel strings, this rustic chitarra pasta cutter it's easy to use and brings old world charm and function to contemporary kitchen tools. Wipe with a dry cloth or brush before first use, and after every use.
